How to make Pani Puri?
To make a deciduous pani puri follow the steps

Ingredients for making Puri
- Semolina flour (Soji/Mule) 1 cup
- All-purpose flour ( Media ) 1/4 cup
- Salt as needed
- Baking powder pinch
- Water for kneading
- Oil for frying.
Ingredients for making The filling:
- boiled potatoes peeled and mashed 3 medium size
- 1/2 cup chickpeas boiled (chana optional) if you want to add
- onion 1/4 cup finely chopped
- fresh coriander leaves finely chopped
- cumin powder 1/ 4 roasted
- chaat masala 1/4 teaspoon
- Salt to taste 1/4 teaspoon roasted
- Tamarind chutney
- Green chutney
- Red chili powder
The Pani (Spiced Water)
- 1 cup fresh mint leaves chopped
- 1 cup fresh coriander leaves chopped
- 2 green chilies (additional taste)
- 1-inch piece of ginger peeled and finely chopped
- 1 teaspoon roasted cumin powder
- 1 teaspoon chaat masala
- 1/2 teaspoon black salt
- 1 teaspoon lemon slices
- Salt as needed
- 4 cups water
- Kala jeera.
Method:
1. Puri Preparation:
- For making a puri first of all, take a bowl and add oil, semolina, all-purpose flour, baking soda, and salt. And mix it well.
- add gradually water and knead the mixture until it becomes a dough. Make a dough tightly that is not soft and crumbly and dry. Cover it with a clean damp cloth and let it rest for 15-20 minutes.
- Make small round shape balls. After that roll out each ball into a thin circle shape. Don't roll them too thick and thin.
- Heat oil in a deep frying pan over a medium flame. Fry the puris until they turn golden brown and crispy. Remove them from the oil and place them on a kitchen towel to absorb excess oil. Set aside.
2. Filling Preparation:
In a bowl mix the boiled potatoes, boiled chickpeas ( chana) for additional taste, chopped onion, coriander leaves, roasted cumin powder, red chili powder, and salt as needed. Mix all ingredients properly.
3. Pani (Spiced Water) Preparation:
- In a grinder add mint leaves, coriander leaves, green chilies, ginger, roasted cumin powder, chaat masala, red chili powder, black salt, lemon juice, and salt. Blend until they become a smooth chutney or paste.
- Then add the chutney into a clean water jug Mix it well to make the spicy flavor of all masala.
4. Assembling Pani Puri:
- Make a small hole on the top of each puri by hand finger or fork.
- Fill the hole with a spicy mixture of potatoes and chickpeas.
- Arrange the stuffed puris on a serving plate.
- Serve the Pani Puri along with the prepared Pani and additional tamarind chutney and green chutney on the side.

Is it healthy or unhealthy?
Pani puri is a healthy dish overall and it must be healthier when made at home. If we talk about the puri, it's made up of regular wheat flour or suji which is healthy. We cooked puris is cooking oil. which makes it unhealthy if you're a regular consumer. Next, talking about the stuffing, it is substantially made up of black chickpeas and/ or potatoes which again is a healthy option. So little consumption of pani puris. it's healthy enough. the most important part of pani puri is Paani!! Which again is made up of Kal jeera which is a healthy digestive controller. So the pani puri is healthy when consumed mainly. But numerous merchandise dilutes the water to make it more acidic by adding unhealthy substances so one should note that before consumption.
